Roasted Wholesome

A quick vegan dish that is light in calories and yet yummy, with wholesome nutrition. Lightly fry chopped up onions in a little olive oil. Add chopped button mushrooms. Add oven baked or roasted baby potatoes and cooked chickpeas. Place in a baking tray and sprinkle over crushed black pepper corns, mixed spices and thyme. Top with spring onion. Bake a little and serve ❤️
