
Gluten free crumpets
This is an easy comfort food to prepare. Mix some chickpea flour with water to a consistency that is not too runny. Then place on medium heat on a pan that is lined with olive oil. Fry until lightly crisp on the outside. Sprinkle cinnamon and xylitol on top. Perhaps even pour on some maple syrup or honey if you are okay with having sugar in your diet.
